With the best deli meats, flavorful baked bread in garlic and herb butter, crispy veggies, and a tangy dressing, the Grinder Sandwich is perfect for satisfying your appetite.

LET’S PREPARE GRINDER SALAD

Grinder Salad Sandwich is a healthy and filling meal that is perfect for any occasion. You can enjoy this recipe as a light lunch or use it to round off a tasty dinner. It is excellent for people who want to eat healthy food on a budget. This sandwich is guaranteed to satisfy your taste buds, but it's also great for those on-the-go days when you want something fast, filling, and delicious. Without any further due, let’s get into the recipe. 


To make the veggies, you'll need:

I used iceberg lettuce, red onions, and chopped pepperoncini—but you could add any other veggies you like.

  • iceberg lettuce, shredded
  • red onions,
  • chopped pepperoncini
To make the dressing, you’ll need:
  • Mayonnaise
  • vinegar
  • yellow mustard
  • red pepper flakes
  • fresh parsley
  • minced garlic
  • Italian seasoning
  • black pepper
  • salt
  • parmesan

Mix all of the dressing ingredients until smooth. Adjust the ingredients as needed to balance flavors. It's also great with grilled chicken or ribs, but I use it as a topping for my favorite kind of sandwich: The Grinder Salad Sandwich!

Note: Vinegar is an excellent addition to your salad sandwich. The most common vinegar is red wine vinegar, but if you don't have that on hand, white vinegar or apple cider will also work. You can even use the juice from the jar of pepperoncini for a sharper flavor.

Preparing onion for a grinder salad sandwich

Sliced red onions can add flavor to your salad sandwich but can also be bitter and spicy. Here's how to get rid of the spicy bitterness and make them more palatable: soak the sliced red onions in ice water and let them sit for about 20 minutes. It will help remove some of the onion's harshness and make it more palatable!

To prepare the grinder salad, toss diced Pepperoncini, shredded lettuce, and onion in a large bowl. Add salad dressing and mix well until thoroughly combined. The amount of peppers you use depends on how spicy you want the dressing to be. It won't be spicy if you use this amount. Feel free to adjust spices to your taste. 

THE DELI MEATS

Grinder sandwiches are the perfect choice for a quick, filling lunch. They're easy to make and great for bringing to work or school because they're so hearty. With loads of deli meat, fresh vegetables, and zesty dressing, this Grinder Salad Sandwich is a pure delight! 

Some popular choices include:

  • beef salami
  • beef prosciutto (bresaola)
  • turkey
  • pastrami or roast beef

The standard version uses tons of different deli meats, but you can customize it depending on your preferences. When choosing deli meats for grinder salad sandwiches, it's important to remember that the more variety you have, the better! So many different types of meat and cheese can go into a sandwich, so why not try them all?

If you're feeling particularly adventurous, consider getting a bunch of different meat and cheese. Then have each person pick their favorite, so everyone can get something they love. 

This is great because every sandwich will be customized to each person's tastes and preferences. But if you don't have time for this, don't worry—it's OK if everyone gets the same thing!

1. Beef Salami

Beef salami adds a distinctive flavor and texture, making it an excellent addition to salad sandwiches.

2. Beef Prosciutto (Bresaola)

This Italian delicacy gives the sandwich a rich and earthy flavor.  

3. Turkey

It has a mild flavor, so you can use it in any sandwich without overpowering it. It is high in protein and low in fat, which means that it won't add too many extra calories or fat to your sandwich! It's also one of the most affordable options when it comes to deli meats.

4. Pastrami or Roast Beef

They have a smoky and citrusy flavor that adds richness to the sandwich.

THE BREAD

The last step is baking the bread for the sandwich. Spread garlic butter over the top of the bread, place a cheese slice inside one half; and bake. A hoagie roll is typically used for this sandwich, but I prefer Ciabatta Bread! I love how soft the inside is and how crispy the outside is

Whatever bread you prefer is fine. Since the bread's secret lies in its preparation, we'll go the extra mile and brush and bake it in garlic butter. 

INGREDIENTS FOR GARLIC SPREAD:
  • unsalted butter, melted
  • minced garlic
  • chopped parsley
  • black pepper
  • oregano
  • parmesan

Mix all the ingredients in a small bowl to make garlic and herb butter. Spread some evenly over the bread—place the cheese of choice inside one half. Provolone is my favorite! Put the bread in the oven at 350°F for a few minutes to melt the cheese and make it golden and crisp.

Add deli meats, tomatoes, avocado, and grinder salad to assemble the sandwich. Press down, slice into halves, and enjoy! Avocados are a great addition, but they are optional. This Grinder Salad Sandwich is the perfect lunchtime solution for anyone who loves a hearty Italian sandwich.

Pro Tip: Adding salt and black pepper to the tomatoes will enhance their taste and make them juicier.

Ingredients

For GARLIC & HERB BUTTER

  • 1/4 cup unsalted butter melted
  • 1 tablespoon finely chopped
  • parsley
  • 1 tablespoon parmesan grated

2 teaspoons garlic finely minced

  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon oregano

For GRINDER SALAD

  • 1 small head of iceberg lettuce
  • 1/4 cup pepperoncini
  • 1/2 red onion thinly sliced
  • 1/2 cup mayo
  • 1 tablespoon vinegar
  • 3 tablespoons parmesan (grated)
  • 2 tablespoons finely chopped parsley
  • 2 teaspoons garlic (minced)
  • 1-2 teaspoons yellow mustard
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt more to taste

More Ingredients

  • bread of choice Ciabatta bread, hoagie roll
  • deli meats of choice (turkey, pastrami, salami)
  • sliced tomatoes
  • avocado (optional)
  • cheese of choice
Instructions

MAKE THE GRINDER SALAD

  1. Add water, ice, and red onion slices to a bowl. Allow it to soak for at least 20 minutes to make it sweeter and less bitter. Discard the water.
  2. Mix mayonnaise, vinegar, garlic, parsley, mustard, parmesan, salt, black pepper, red pepper flakes, and Italian seasoning in a small bowl.
  3. Mix the lettuce, red onion, pepperoncini, and dressing in a large bowl. Make any necessary adjustments based on your taste.

PREPARE THE GARLIC AND HERB BUTTER

  1. Mix the melted butter with the parsley, garlic, parmesan, pepper, and oregano in a small bowl. Keep it aside.

GET THE SANDWICH READY

1. To prepare the oven, preheat it to 350°F.

  1. Brush the garlic butter over the top of the bread. Place the cheese on the bottom of the bread and put them in a baking tray in the oven for 6-8 minutes until the cheese is melted and the bread is toasted.
  2. Assembling: place the deli meats on top of the cheese, followed by tomatoes, avocado, and grinder salad. Add the toasted bread on top, press down, place the sandwich on a cutting board and cut it in half.
