HOW I MAKE QUICK CARNE ASADA LOADED FRIES

My kids ask me once a week for cheese fries, so instead of running to Wendy's or a another fast food chain, I started making them at home. This recipe was created in San Diego (don't quote me..do your own research 😂 ), and is a hometown favorite and a California-Mexican classic. It is a recipe that my entire family enjoys, especially mid-week when we just want something super delicious to eat. A way to quickly cut your fries is by using a fry cutter. There are so many ways you can season the fries and make this recipe your own. I season my fries with the same seasonings I use to season the steak, but you can season the fries with just salt and pepper if you like. For this recipe I use  McCormick Gourmet Carne Asada Seasoning on both the fries and steak, but I have listed out the spices within the ingredients list. If you do not have a lot of time, be sure to pick up this seasoning in your spice aisle at your local grocery store.

A good technique that I use to make my oven baked fries crispy is to place the cut potatoes into a large mixing bowl and cover the potatoes with hot water (as hot as you can get it). Soak the potatoes for 15-30 minutes. Drain the potatoes, and spread them out on a clean kitchen towel/paper towel and pat dry. In a large bowl, toss the potatoes in around 2 tablespoons of avocado oil (or Peanut oil)l. Then bake the fries as 425F for 15-20 minutes, then flip the fries and bake for an additional 10-15 minutes. The cooking time really depends on your oven. My oven seems to cook the fries really fast, so they are done in around 25 minutes. Just make sure you are watching the fries to ensure they do not burn.

Sprinkle with the seasonings once they are fresh out the oven and gently toss. 

Most people will opt to marinade their flank steak, but when I make these fries, I purchase pre-cut flank steak already cut in strips and continue to cut them into bite size chunks. I season the beef with McCormick Carne Asada Seasonings. If you cannot find this seasoning you can season the beef with a mixture of smoked paprika, ground cumin, garlic powder, chipotle chili powder, and you can add salt and pepper, to taste. I make the flank steak on a cast iron skillet on medium-high heat and cook the steak for 5-7 minutes on each side. Remove the steak to a cutting board and let it rest for 5 minutes covered in foil. Before I place the flank steak on the fries, I squeeze a little lime juice on the steak, it is chef kiss!! For the toppings, you can make some fresh store bought guacamole, Pico de gallo, sour cream, cilantro, queso cheese, jalapeños, and last but not least Cotija cheese. My absolute favorite brand of Queso is Culinary Cowgirls Lone Star Queso Dip. Make this recipe yours by topping with everything that you love, as you really can do no wrong with this recipe!

These Carne Asada Loaded Fries are perfect for a midweek night…well perfect for any night IMO! This is one of my favorite things to make for the kiddos game night or whenever we want a good appetizer for a meal LOL!

Ingredients
  • 2-1/2 lbs Flank Steak 
  • 3 russet potatoes, cut 1/4-inch thick *I use a fry cutter*
    3-4  tablespoons avocado oil (or any neutral oil)
Carne Asada Seasonings

(save extra in a air tight container)

  • 1/2 tablespoon smoked paprika 
  • 1/4 teaspoon Ground Cumin 
  • 1/2  tablespoon garlic powder
  • 1/2  tablespoons chipotle chili powder 
  • 1/2 teaspoon black pepper 
  • 1 teaspoon kosher salt
Toppings:
  • 1 cup Queso cheese
  • 5 tablespoons Pico de gallo
  • 3 -4 tablespoons sour cream
  • 3-4 tablespoons guacamole or fresh Avocado
  • 1 Lime, cut in 4 pieces
  • Jalapeños, sliced
  • Cilantro, chopped for garnish 
  • 1/4 cup Cotija cheese
Instructions
  1. Cook the entire flank steak on a grill or chop it up and cook on a cast iron skillet on medium-high heat by cooking the steak for 5-7 minutes on each side.  Remove the steak to a cutting board and let it rest for 5 minutes covered in foil. I squeeze a little lime juice on the steak after it is done resting. 
  2. Bake the fries as 425F for 15-20 minutes, then flip the fries and bake for an additional 10-15 minutes. 
  3. Sprinkle with the carne asada seasonings once they are fresh out the oven and gently toss to evenly coat with seasonings. (you can season the fries a little before and after if you want to)
  4. To serve, place the fries on a plate (I use warm mini cast iron skillets,  with Queso cheese and add the carne asada. Top with Guacamole (or fresh Avocado slices , Pico de gallo, sour cream, cilantro, Jalapeños, and Cotija cheese.

NOTES: 

Season the flank steak and fries to taste, and store any extra seasonings in an air tight container

Drain the potatoes, and spread them a clean kitchen or paper towel and pat dry. In a large bowl, toss the potatoes in around 2 tablespoons of avocado oil. Then bake the fries as 425F for 15-20 minutes, then flip the fries and bake for an additional 10-15 minutes. 

For even Crisper fries, you can cook at 450F, but I would make sure the fries are not too thin if you cook them at this temperature or they will end up being chips. Fries can be made in the air fryer as well and cooked in batches, and of course, they can be deep fried as well.
