The Best Monster Cookies

In this recipe I am using Kerrygold Pure Irish Butter because of the quality of butter. I feel it is unmatched, some might like to argue that Lewis Road has the better butter. Just pick a quality brand of butter, as it really makes your cookies taste amazing in the end. I also use UNREAL Milk Chocolate Gems because they are not genetically modified like M&M's. I purchase them at my local Whole Foods Market. I think they are the best candy coated milk chocolate gems.  Also, I use Bob's Red Mill Organic Oats Rolled because everything BOB makes is amazing and super good with no added/uneeded stuff lol! This recipe is such a treat, and my entire family really enjoys these cookies! I hope your family loves them as well.

Ingredients
  • 8 ounces (2 sticks) Unsalted Butter, room temp (I use Kerrygold Pure Irish)
  • 1 cup pure cane brown sugar (light or dark) *I have used them both and the cookies come out great either way
  • 1/2 cup granulated sugar
  • 2 large eggs, plus 1 egg yolk
  • 1 tablespoon vanilla extract
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups old fashion rolled oats
  • 2 tablespoons Carnation Instant Nonfat Dry Milk
  • 1/2 cup dark chocolate chips
  • 1/2 cup semi-sweet chocolate chips
  • 1 cup Unreal, Candy Coated Milk Chocolate Gems, plus 2 tablespoons for topping
Instructions
  1. Preheat oven to 350F and  line a large baking sheet with parchment paper or a silicone mat.
  2. In a small mixing bowl combine flour, baking soda, baking powder, dry milk, and salt, set aside.
  3. In a large mixing bowl, mix together the butter, brown sugar, granulated sugar, and vanilla until combined. Next, add the eggs and the egg yolk, and mix well.
  4. Add the small bowl of dry ingredients, then mix in your oats. 
  5. Fold in 1 cup of the M&M's, semi-sweet chocolate chips, and dark chocolate chips.
  6. Using a cookie scooper scoop 2 tablespoon of dough into your hands and roll into a ball (Example: 1 #40 scoop of cookie dough or 2 #60 scoops of cookie dough). Place 2 inches apart on the prepared baking sheet.
  7. Transfer to the oven and bake for 8-10 minutes then pull the pan out and stick a couple of the the remaining Unreal candy into the cookies (about 3 coated candies per cookie). Bake an additional 2-3 minutes.
  8. Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes, to continue to bake.  Repeat steps until all cookie dough is used.
  9. Store in an airtight container for up to 3 -4 days on the counter.

These look so lovely! I love the idea of using pizza dough. We make TJ pizza all the time and often have like half a bag of dough left. Next time we do, I'll make these for breakfast the next day. Thanks for sharing :)
