CRISPY CILANTRO LIME CHICKEN SANDWICH

Crispy Cilantro Lime Chicken Sandwich

On certain occasions, I prefer to have a quick dish ready for dinner; on other occasions, however, I am fully engaged in a culinary experiment and have all the time I need along with a lot of trial and error. This Crispy Cilantro Lime Chicken Sandwich belongs to the latter category. Over the years, I've made numerous signature fried chicken sandwiches, and if you know me, you'll understand that my love for pickles is intense, along with my habit of taking brine straight from the jar while I wait for the pans to heat up.

The foundation of any standout fried chicken sandwich is how you treat the meat before it ever hits hot oil. For this fried chicken sandwich recipe, I ditched the traditional egg wash. Instead, I whisk a splash of my seasoned dry flour blend directly into milk and dill pickle juice. It tenderizes the meat from the inside out and gives every bite that savory, craveable tang.

For this remix, I also wanted to take that familiar crunch and lift it with bright, bold contrast. I kept picturing a sticky cilantro-lime glaze kissed with honey and red pepper flakes, paired with an ultra-crisp cucumber-and-purple-cabbage slaw. The result is pure magic: shattering crust, sticky-sweet heat, cooling herbaceous cream, and that clean cabbage snap. Crisp purple cabbage and fresh cucumber add a refreshing crunch, all tied together with a cool, garlicky herb spread. It’s messy, sweet, savory, and easily one of the best fried chicken twists I’ve made in my kitchen.

The Secret to the Batter: Pickle Juice & No Eggs

  • Natural Tenderizer: The gentle acidity in the pickle brine seasons the chicken all the way through while locking in moisture so the meat never dries out.
  • Superior Craggy Crust: The milk-and-starch slurry creates the ultimate glue for our seasoned flour, building deep, craggy ridges that stay crispy long after glazing.

My Secret Ingredient: Malted Milk Powder

If you’ve made my Spicy Korean Fried Chicken Sandwich, you know malted milk powder is my not-so-secret weapon. Made from malted barley, wheat, and evaporated whole milk solids, it works wonders in fried poultry breading:

  1. Even, Golden Browning: The natural maltose sugars caramelize rapidly in the oil, yielding a deep, mahogany crust without overcooking the meat.
  2. Balanced Sweetness: Combined with a touch of confectioners' sugar, it delivers an earthy, toasty sweetness that rounds out the savory garlic and onion notes.
  3. Where to Find It: Grab a canister of Carnation Malted Milk in the baking aisle right beside the hot cocoa mixes.

Homemade Dry Batter vs. Korean Fried Chicken Mix

For the lightest, crunchiest texture, you have two options:

  • The Scratch Method: Blend all-purpose flour with cornstarch and a pinch of baking powder. The starch lowers the overall gluten content, guaranteeing a delicate shatter rather than a heavy, dense crunch.
  • The Pantry Shortcut (My Go-To): I love using packaged Korean fried chicken mix; specifically Beksul Fried Chicken Mix. You can order it from amazon or get it at your local asian market. It's already seasoned and blended with optimized starches. Just whisk in a tablespoon of malted milk powder, and you're set!

Building Balance: The Sticky Glaze & Cool Slaw

A crunchy fried cutlet needs dynamic toppings to cut through the richness. We balance this sandwich with two vibrant components:

  • The Cilantro Lime Glaze: Fresh lime juice, raw honey, soy sauce, and crushed red pepper flakes simmer down into a glossy, tangy syrup. Brushing the glaze directly onto the warm crust keeps the coating crisp instead of soggy.
  • The Purple Cabbage & Cucumber Slaw: Purple cabbage provides an unbeatable structural crunch that won't wilt under warm chicken. Toss it with paper-thin cucumbers, sliced jalapeño, lime zest, and a splash of pickle brine to bridge the gap between the savory crust and the sweet glaze.

Pro Tips for the Best Chicken Sandwich

  • Brush, Don’t Dunk: Use a pastry brush to brush the cilantro-lime glaze over the hot cutlets. Tossing fried chicken directly in sauce can soften that hard-earned craggy exterior.
  • Dial the Heat: Red pepper flakes add a gentle, warming heat. If cooking for younger kids or heat-sensitive guests, scale back to 1 teaspoon. Love heat? Add a pinch of cayenne straight into the dry dredge.
  • Watch Your Oil Temp: Keep your peanut oil steady around 325°F (163°C). If the oil drops too low, the batter will absorb excess grease; if it gets too hot, the sugars in the malted milk will brown before the center is cooked through.
  • Breast vs. Thighs: My husband loves chicken breasts pounded thin into uniform cutlets, while the kids always vote for chicken thighs. Both work beautifully—just ensure the internal temperature registers a safe 165°F (75°C).
  • Frying Oil Matters: Peanut oil is my absolute standard for frying chicken because of its high smoke point and clean flavor, but any neutral, high-heat oil (like canola or vegetable) will get the job done.
  • Make-Ahead Friendly: You can simmer the cilantro lime glaze, blend the herb spread, and toss the slaw while the chicken chills in the wet soak. When it’s time to fry, assembly takes just minutes.
  • Customizing the Heat: The crushed red pepper adds a warm kick. If you’re cooking for little ones or prefer a mild profile, dial it back to 1 teaspoon. If you want serious fire, toss a pinch of cayenne into the dry dredge.
Fun Fact: I made this sandwich three Fridays in a row before I could finally document the recipe; every single batch disappeared off the cooling rack before I could set up my camera and catch the light!

  • Small saucepan
  • Large and small mixing bowls
  • Bowl or dish with a lid for soaking the chicken
  • Plastic wrap
  • Meat tenderizer hammer-mallet tool
  • Wire rack
  • Tongs
  • Whisk
  • Measuring cups and spoons

Chicken:

  • 2 boneless, skinless chicken breasts (or 4 chicken thighs)

Wet Batter:

  • ½ cup milk
  • ¼ cup dill pickle juice
  • ¼ cup of the dry batter (below)

Dry Batter:

  • 1 cup all-purpose flour
  • ¼ cup cornstarch
  • 1 Tablespoon malted milk powder
  • 2 Tablespoons powdered sugar
  • 1 teaspoon garlic salt (I use Jacobsen Salt Co. Infused Garlic Salt)
  • ½ teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • ½ teaspoon baking powder
  • ¼ teaspoon cayenne pepper (optional, for extra heat)

Or skip the homemade dry batter and use Korean fried chicken mix. See the option below the instructions.

Cilantro Lime Sauce:

  • ½ cup fresh lime juice (about 2 limes)
  • ¼ cup water
  • 2 Tablespoons soy sauce
  • 1 Tablespoon crushed red pepper (use 1 teaspoon for milder)
  • 1 teaspoon ground cumin
  • 2½ Tablespoons honey
  • ½ cup fresh cilantro, chopped

Creamy Herb Sauce:

  • ¼ cup sour cream
  • ¼ cup light mayonnaise
  • 2 Tablespoons fresh parsley, finely chopped
  • ½ teaspoon garlic salt (I use Jacobsen Salt Co. Infused Garlic Salt)
  • 1 teaspoon fresh lime juice
  • Kosher salt and pepper, to taste

Cucumber Cabbage Slaw:

  • 1 small cucumber, thinly sliced
  • 1½ cups shredded purple cabbage (a bag of pre-shredded works great)
  • 1 jalapeño, thinly sliced
  • 1 teaspoon honey
  • 1 teaspoon Sriracha
  • 1 Tablespoon pickle juice
  • ¼ teaspoon garlic salt (I use Jacobsen Salt Co. Infused Garlic Salt)
  • 1 teaspoon lime zest

Sandwich Buns:

  • 4 ciabatta rolls (or brioche buns), split
  • 1 Tablespoon unsalted butter, melted

For Frying:

  • Peanut oil, for frying (at least 2 inches to cover the bottom of a pan)

Instructions

  1. Slice each chicken breast in half horizontally to make 4 cutlets. Place the chicken between 2 pieces of plastic wrap and, using a meat tenderizer hammer-mallet tool, pound each piece to ½ inch thick and uniform.
  2. In a shallow baking dish, whisk together all of the dry batter ingredients.
  3. Scoop ¼ cup of the dry batter into a second shallow dish. Whisk in the milk and pickle juice until smooth, like a thin pancake batter. Add the pounded chicken, turn to coat, then cover and refrigerate for 30 minutes to 1 hour.
  4. While the chicken soaks, make the cilantro lime sauce by combining the listed ingredients in a small saucepan. Allow to simmer 8-10 minutes on low heat, stirring occasionally, until reduced and slightly syrupy. Remove from heat and set aside.
  5. Make the creamy herb sauce by combining the listed ingredients in a small mixing bowl. Mix well and refrigerate until ready to use.
  6. Make the slaw by tossing the cucumber, shredded purple cabbage, and jalapeño with the honey, Sriracha, pickle juice, garlic salt, and lime zest in a medium bowl. Refrigerate until ready to use.
  7. In a heavy-bottom pan or cast-iron skillet, heat 2 inches of peanut oil over medium heat until a deep-fry thermometer reads 325 degrees, or until small drops of water sizzle and evaporate.
  8. Lift each piece of chicken out of the wet batter and let the excess drip off. Dredge it in the dry batter, pressing firmly to coat completely. Let the chicken rest 2-3 minutes so the coating sets.
  9. Fry the chicken 2 pieces at a time for 7-8 minutes, flipping halfway, until deep golden brown; adjust the heat as needed. The internal temperature should reach 165˚F (75˚C). Drain on a wire rack or paper towel-lined plate.
  10. Brush melted butter on the ciabatta rolls and toast lightly.
  11. Brush the hot chicken with the cilantro lime sauce. Spread the herb sauce on both sides of the toasted rolls, add the chicken, and top with the cucumber cabbage slaw.

Option: Korean Fried Chicken Mix

This is how I made it! Use Korean fried chicken mix in place of the homemade dry batter. Everything else stays the same. I use Beksul Fried Chicken Mix (백설 치킨튀김가루), which you can find at most Asian markets. Look for the white bag with the red snowflake logo.

  • 2 cups Beksul Fried Chicken Mix
  • 1 Tablespoon malted milk powder

Whisk the fried chicken mix and malted milk powder together in a shallow baking dish, then follow Steps 3 through 11 exactly as written, using the mix in place of the dry batter. The mix is already seasoned, so there's no need to add extra salt.

Enjoy!

These look so lovely! I love the idea of using pizza dough. We make TJ pizza all the time and often have like half a bag of dough left. Next time we do, I'll make these for breakfast the next day. Thanks for sharing :)
