Ingredients

For Blackened Shrimp:

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, finely diced
  • ½ lb large white shrimp, peeled and deveined
  • 1 tablespoon Zatarain's Blackened Seasoning

For Cream Sauce and Pasta:

  • ½ cup white sherry cooking wine
  • 2 tablespoon drained bruschetta sun-dried tomatoes in oil
  • 1 tablespoon Fresh Lemon Juice (optional)
  • 1 (.087 ounce package) McCormick Garlic Butter Shrimp Scampi seasoning Mix
  • 1 ¾ cups heavy cream
  • ⅔ cup fresh grated Parmesan cheese
  • 1 tablespoon fresh  parsley, chopped
  • 1 tablespoon fresh green onions, chopped
  • 8 ounces pasta, cooked and drained
  • Salt and pepper to taste

Garnish:

  • Shaved parmesan
  • Chopped parsley
  • chopped green onions
  • Lemon zest
  • Red pepper flakes

Instructions

  1. Heat a large skillet over medium-high heat. Melt 2 tbsp butter and 2 tbsp olive oil. Once bubbling, add diced garlic and cook until fragrant. Add shrimp, sprinkle with Zatarain's Blackened Seasoning, and cook for 2-3 minutes on each side until cooked through. Transfer to a bowl; set aside.
  2. In the same pan, pour in the white sherry cooking wine and let it reduce by half, scraping any bits from the pan. Add the sliced sun-dried tomatoes and sauté for 1-2 minutes. Mix in the McCormick Garlic Shrimp Scampi seasoning packet. Add lemon juice if desired.
  3. Reduce heat to low-medium and pour in the heavy cream. Bring to a simmer while occasionally stirring. Season with salt and pepper to taste.
  4. Stir in the grated Parmesan cheese, allowing the sauce to simmer for another minute until the cheese melts into the sauce. Add the cooked pasta.
  5. Return the cooked shrimp to the pan, sprinkle with fresh parsley and green onions, and stir to combine.
  6. Garnish with more shaved Parmesan cheese, chopped parsley, lemon zest, and red pepper flakes.
