Ingredients

For the Cake:

  • 1 (15.25 ounce) box Yellow  Duncan Hines cake mix
  • 3 large eggs
  • 2/3 cup vegetable oil
  • 1 cup sour cream
  • 1/2 teaspoon banana extract
  • 2 tablespoons pumpkin pie spice
  • 1 cup light brown sugar

For the Vanilla Glaze:

  • 1 1/2 cups powdered sugar
  • 1/4 cup milk
  • 1 1/2 teaspoons vanilla bean paste

Instructions

1. Preheat Your Oven: Preheat your oven to 325°F (163°C) and butter or spray a bundt cake pan.

2. Prepare the Cake Batter: In a large mixing bowl, whisk together the  yellow cake mix, eggs, vegetable oil,  sour cream, and banana extract until you get a smooth batter.

3. Prepare the Pumpkin Pie Spice Sugar Mixture: In a separate bowl, mix the pumpkin pie spice (you can use cinnamon as well) and light brown sugar. Set this mixture aside.

4. Layer the Cake Batter: Pour half of the cake batter into the prepared bundt pan.

5. Add Pumpkin Pie Spice Swirl:  Sprinkle half of the pumpkin pie spice sugar mixture evenly over the layer of cake batter. Use a knife or toothpick to create a swirling pattern by gently dragging it through the batter and sugar mixture.

6. Add the Remaining Batter: Pour the remaining cake batter over the pumpkin pie spice sugar swirl layer.

7. Repeat the Swirl: Sprinkle the rest of the pumpkin pie spice sugar mixture on top of the second cake batter layer. Again, use a knife or toothpick to create a beautiful swirl.

8. Bake: Place the bundt pan in the preheated oven and bake for 30-35 minutes or until a toothpick inserted into the cake comes out clean. The top of the cake should be golden brown.

9. Cool the Cake: Remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, carefully invert the cake onto a wire rack to cool completely.

10. Prepare the Vanilla Bean Glaze: In a bowl, mix the powdered sugar, milk, and vanilla bean paste until you have a smooth, pourable glaze. Add more milk or powdered sugar to achieve your desired consistency.

11. Glaze the Cake: Once the cake has completely cooled, drizzle the vanilla glaze evenly over the top of the bundt cake.
