Ham Fried Rice with Egg

This recipe for ham fried rice with egg is an easy way to turn leftover rice into a meal. The dish comes together in just 30 minutes and has tons of flavor.

Ingredients

  • 12 oz. cubed ham 
  • 2-3 tbsp neutral oil, divided
  • 2 eggs
  • 1 tbsp water
  • 1/2 teaspoon sesame oil (optional)
  • 2 cups cold cooked Calrose rice or Sushi rice 
  • 4 garlic cloves, minced
  • 3 green onions, chopped
  • 3 tsp dark soy sauce, more to taste 
  • 1 tbsp oyster sauce

Instructions

  1. In a small bowl, beat the two eggs with a tablespoon of water, and set aside.
  2. Add one tablespoon of oil to a large skillet or a wok over medium heat or until sizzling, then add in cubed ham. Cook until golden brown on the outside, once cooked through, remove from heat and set aside.
  3. Add in 1 tablespoon of oil the two eggs to the same pan and leave flat for about 2 minutes or until cooked; then chop. 
  4. Add in the garlic and allow to cook for 2 minutes or until fragrant. 
  5. Add in cold rice, dark soy sauce, oyster sauce, sesame oil, and black pepper; stir-fry tossing continuously for about 5 minutes (adding in more dark soy sauce, to taste). 
  6. Top with freshly chopped green onions.
